Ingredients:
1 cup almond flour
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1/2 cup labneh, Greek yogurt, or sour cream
1/2 cup unsalted butter, melted
1/2 cup fresh orange juice
Zest of 1 orange
2 teaspoons poppy seeds
1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
2. In a bowl, mix almond flour, all-purpose flour, baking powder, baking soda, and salt.
3. In another bowl, beat eggs and sugar until light and fluffy.
4. Add melted butter, orange juice, orange zest, labneh, and vanilla extract to the egg mixture. Mix well.
5. Gradually incorporate the dry ingredients with poppy seeds until just combined. Be careful not to overmix.
6. Pour the batter into the prepared pan and smooth the surface.
7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
8. Let the cake cool in the pan for 10 minutes, then transfer it to a rack to cool completely.
For the frosting (optional):
1/2 cup powdered sugar
3 tablespoons heavy cream
Mix until smooth and pour over the cake when completely cooled.
