Note:
- personally don’t like raw fish, but feel free to use it if you ensure it’s “sushi-grade”. Alternatively, you can prepare this recipe with raw tuna or cooked shrimp.
- I used sushi rice for this recipe, but if you don’t have this type of rice available, you can substitute it with any short-grain rice or a rice that sticks well.
- If you don’t have sushi vinegar, you can substitute it with 1/2 cup of white vinegar, 4 tablespoons of cold water, 1 teaspoon of salt, and 1 tablespoon of sugar.
- You can use Japanese Kewpie mayo, but you can substitute with regular mayo. The difference between Japanese mayo is that it’s more liquid. The key difference between the two mayonnaises is that Japanese mayo is made with only egg yolks, while American mayo typically includes whole eggs. Using only egg yolks results in a mayonnaise that’s richer and more custard-like in texture, giving Japanese mayo its characteristic golden glow.
- Soy sauce: Tamari is a variety of soy sauce that is generally produced without wheat, making it suitable for people with gluten sensitivity or celiac disease. On the other hand, traditional soy sauce typically contains a mixture of soy, wheat, water, and salt. Flavor: Tamari tends to have a more intense flavor and less salty taste than soy sauce. This is because tamari is produced from the liquid part of miso fermentation, while soy sauce contains a mixture of fermented soy and wheat. In summary, while tamari is a gluten-free option with a deeper and less salty flavor, traditional soy sauce may contain wheat and has a saltier and less intense taste.”
Ingredients:
Sushi Rice
1 cup sushi rice
2 cups water
1 tsp salt
1/4 cup rice vinegar
1 tbsp sugar
1 pound salmon (Skin removed)
1 tsp garlic powder
Sal and pepper to taste
1 tablespoon sesame oil
3 tablespoons mirin
3 tablespoons soy tamari or soy sauce
2 green onions, thinly sliced
Spicy Mayo sauce
2 tablespoons sriracha sauce
1/2 cup mayonnaise
2 cloves garlic minced
1 tbsp honey
1/2 tsp sal
1 tbsp lemon
1 tablespoon sesame oil
Toppings
Avocado
Slice Jalapeños
slice cucumber
2 tablespoons sesame seeds
Nori sheets, cut into thin strips (optional, for garnish)
Instructions:
To make crispy sushi rice, start by rinsing the rice under cold water until it runs clear. Then, cook the rice in a pot with 2 cups of water, bringing it to a boil and simmering for about 20 minutes until the water is absorbed. Let it sit for 10 minutes, then fluff with a fork and mix in salt and rice vinegar (plus sugar if desired).
Allow the rice to fully cool, transferring it to a bowl and chilling it in the fridge while I cook the salmon and assemble the toppings.
To make the rice cups, you should use a cupcake mold and lightly coat it with your preferred oil using a brush to toast the bottom more. Then, place a spoonful of rice and press it with the help of a spoon to form a perfect cup, and fill them afterward.
Bake at 400 degrees for 10 minutes or until they are crispy and golden brown.
With a fork, shred the salmon and add a little spicy mayonnaise sauce to fill the crispy rice cups.
To make the salmon
Season your salmon fillet with garlic powder salt and pepper, then gently coat the tops with
sesame oil, tamari or soy sauce, mirin and 1 tablespoon Spicy Mayo sauce and green onion bake (400 f ) for 15-20 minutos.
Spicy Mayo sauce
In a small bowl, mix together the sesame oil,sriracha sauce, honey , lime juice, mayonnaise, garlic , sal and pepper.
