CAJUN CHICKEN PASTA

Ingredients:
For the Cajun Seasoning:
tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper (adjust to taste)
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Pasta:
2 boneless, skinless chicken breasts, thinly sliced
2 tablespoons Cajun seasoning (from above)
2 tablespoons olive oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 onion, thinly sliced
1 tbsp butter
2 tbsp tomato paste
3 diced tomatoes
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
2 tbsp crema cheese
8 oz penne or fettuccine pasta
Salt and pepper to taste
Fresh parsley or basil chopped (for garnish)
Instructions:
Cajun Seasoning:(you can buy the ready seasoning in the supermarket) or make your own .
Cajun seasoning:
In a small bowl, mix together paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper. Set aside.
Pasta:
Cook the pasta according to the package instructions. Drain and set aside.
Chicken:
Season the chicken slices with olive oil and 2 tablespoons of the Cajun seasoning.
In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken slices and cook until they are no longer pink in the center, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
Vegetables:
In the same skillet, add a little more olive oil if needed and the butter. Add the minced garlic and sauté for an additional 1-2 minutes. Add the diced tomatoes, sliced bell peppers and onion. Sauté until they are softened, about 3-4 minutes. Add the tomato paste
Sauce:
Pour the chicken broth into the skillet, scraping any browned bits from the bottom of the pan.
Add the heavy cream Add and cream cheese
1 tsp Cajun seasonings and bring the mixture to a simmer.
Allow the sauce to simmer and thicken for about 5 minutes.
Combine:
Add the cooked pasta and chicken back into the skillet with the sauce.
Toss everything together until well coated in the sauce.
Season with salt and pepper to taste.

Serve:
Garnish with chopped fresh parsley before serving and grated Parmesan cheese.
