Ingredients

1/4 cup olive oil

1/4 cup melted butter

5 cloves of garlic, chopped

2 tablespoons honey

2 whole lemons, one juiced and the other sliced

2 whole oranges, one juiced and the other sliced

4-5 potatoes (optional)

5-6 small carrots 

1 tablespoon oregano

1/2 teaspoon thyme

1 teaspoon onion powder

1 teaspoon garlic powder

Kosher salt and freshly ground pepper, to taste

1 whole chicken or 8-10 pieces of bone-in chicken (thighs and legs work best)

2 shallots or medium onions, thinly sliced

1/4 cup chopped parsley

Instructions

1. Preheat the oven to 400 degrees F.

2. In a bowl, mix olive oil, garlic, honey, melted butter, lemon juice, orange juice, thyme, oregano, chopped parsley, onion powder, garlic powder, salt, and pepper.

3. Pat the chicken dry with a kitchen towel, season with salt and pepper, and place it in a baking dish, skin side up. Spread evenly in the pan.

4. Pour the olive oil mixture over the chicken, turning the pieces to cover all sides. (You can marinate the chicken in this mixture if desired, for about half an hour.) Place lemon and orange slices, potatoes, carrots, and onion around and under the chicken. Sprinkle generously with thyme, rosemary, salt, and pepper.

5. Bake uncovered for about 1 hour or until the chicken is cooked, and the juices run clear. Transfer the pieces to a serving dish and garnish with additional fresh chopped herbs, if desired.
