Ingredients:
1 pound chicken tenders
1 cup buttermilk(plain yogurt )
2 cups Panko breadcrumbs
2 cups flour
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 half a squeezed lemon
1/2 teaspoon poultry seasoning (optional)
A pinch of cayenne pepper
Cooking spray (Pam or similar, if baking)
Vegetable oil for frying
Optional: dipping sauces like ranch, honey mustard, or BBQ
Instructions:
Marinate the Chicken:
In a bowl , combine the buttermilk, salt, black pepper, garlic powder, paprika, poultry seasoning (if using), half a squeezed lemon and cayenne pepper. Mix well.
Add the chicken tenders to the buttermilk mixture, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight in a ziplock bag for best results.
Prepare the Breading Station:
Set up three shallow bowls. Place the flour in the first bowl, beaten eggs (Season the egg with a little paprika, garlic powder and 3 tablespoons buttermilk a pinch of salt and pepper. )in the second bowl, and Panko breadcrumbs in the third bowl.

Remove the chicken tenders from the buttermilk marinade, allowing any excess to drip off.
Dredge each tender in the flour, shaking off any excess.
