Ingredients:

6 cod fillets (about 6 ounces each)
3 tablespoons olive oil
1 shallots , finely chopped
4 cloves garlic, minced
1 cup cherry tomatoes
1/4 cup pitted Kalamata olives
2 tablespoons capers, rinsed and drained
1/2 slices roasted red peppers
1/2 teaspoon dried oregano
1/2 teaspoons chili flakes
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Lemon (for serving)

Instructions:

Preheat the oven to 375°F (190°C).
Pat the cod fillets dry with paper towels and season them with salt and pepper on both sides.
In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
